Tim started his bakery apprenticeship in 1977.
This apprenticeship ran for 4 years.
His exam results of 2nd in the state of Victoria, showed his willingness and gift in the bakery trade.
After this he took 12 months out of the trade before moving to Hay with his wife and young family.
On 26th September 1983, the day Australia II won the America's Cup, Tim & Jenny commenced a business partnership (with another couple) and opened a bakery in Hay.
There had not been an active bakery in Hay since 1976, when Sunicrust bought out the last bakery in the Town.
The original bakery building was a ramshackled building that used to be the old local newsagency.
In 1990, Tim and Jenny bought their partners out of the business and commenced operating it on their own.
From this point until today they have gone from strength to strength.
1992-1993 they commenced renovations on the old building.
These renovations included
New floors and walls in both the shop and bakery areas
Re-roofing
Removal of a house at the back of the shop
Painting and Decorating
Extensions to the shop (encompassing where the old house stood)
These extensions allowed room to enclose one of the biggest and most efficient preparation and bakery sections in the Riverina.
These renovations have been described as arduous and as long as having a baby, as the whole procedure took 9 months.
But in this 9 months there were only 3 days that the business was closed, allowing very little disruption to Hay having freshly baked bread daily.
Tim, Jenny and their children (Carla, Mark and Alannah), have worked the bakery bringing to Hay the opportunity of daily FRESH baked bread, rolls, pastries and cakes.
Carla could often been seen helping her mother behind the counter.
While it was not unusual to see Mark at 1am helping his father with baking.
Alannah has helped where she could, although she was still a little young to help too much.
In recent years they have employed up to 14 local people to help in the bakery and subsidiary lines servicing the area of Hay, Booligal, Ivanhoe, and surrounding districts.
Their latest venture has been the reactivation of a cafeteria at one of the largest stations in the Hay District.

Snack Meals
Hot and Cold Drinks
and a wide range of other food and drink items
